Well, feel the goodness of apple chunks in the form of cake.
INGREDIENTS
● 1/2 cup (1 stick) unsalted butter, at room temperature
● 1/4 tsp. salt
● 1 cup all-purpose flour, placed into measuring cup & leveled-off
● 1 tsp. baking powder
● 1 tsp. vanilla extract
● 2/3 cup sugar (granulated), plus more to sprinkle over the cake
● 2 large eggs
● 2 baking apples (peeled, and cut into 1/2-inch cubes)
● 3 tbsp. dark rum
● Confectioners’ sugar, for decorating the cake (optional)
INSTRUCTIONS
1. Begin with preheating the oven to 350°F. Grease a 9-inch regular cake pan or a springform with nonstick cooking spray or butter. If you are using a regular cake pan, place a parchment paper at the bottom of the pan and grease again.
2. Take a small bowl and mix in baking powder, salt, and flour.
3. With a handheld mixer with attached beaters or a stand mixer with attached paddles. Beat the granulated sugar and butter until fluffy and light. It will take about 3 minutes. Now add eggs (one at a time), simultaneously beating well and scraping the sides of the bowl.
4. Now, whisk in rum and vanilla. If the batter appears a bit grainy, do not panic, it’s completely fine. Add in the flour mixture and blend at a low speed until combined — Tuck in the chopped apples with the help od a rubber spatula.
1. Pour the batter into the prepared pan and smoothen the top. Now, evenly sprinkle 1 tablespoon of granulated sugar and time for some baking. Bake till golden and the cake passes the toothpick test when inserted in the center. It will take about 40 minutes. Take out the cake and let it cool on the wire rack.
2. Take a blunt knife and run it around the edges of the cake. If you are using a springform pan, then remove the sides. But if using a regular one, then invert the cake on the rack, carefully. Remove the parchment paper, then carefully flip the cake and bring the right side up on the platter.
3. Now, with the help of a fine sieve, dust the confectioners’ sugar on the top (optional). You can also lightly sweeten it with vanilla ice cream or whipped cream. It tastes good if served warm or at room temperature.
Just some friendly instructions- this recipe can be frozen and preserved for about 3 months. To do so, cover the cake tightly with a freezer wrap or aluminum foil only after it is cooled completely. Just remember to thaw it overnight before serving the next day.
Tada! You just made yourself a cake that you can eat anytime that, too, without any guilt because remember the goodness of apples that this cake holds? You can also bake and send cake in USA and surprise them.
